Chai-jer-fau ~ Cinnamon Tea
Although there is no actual tea in this drink, it is still called tea!
The plain bioled cinnamon gives the beverage a unique flavour which is
very good for the circulation. One of the most traditional drinks in the
UAE, this recipe has been handed down many generations.
3 cups water
sugar to taste
4 large pieces cinnamon bark
1/2 teaspoon saffron threads
Boil water, sugar and cinnamon rapidly for 15 minutes. Strain off into a
tea flask (vacuum flask). Add the saffron and leave to infuse for 10
minutes.
