
Sa-mak bil fern ~ Baked Fish
Baked fish is more popular
today than in earlier times
and it can be quite delicious
with the addition of a few
extra spices.
1 large fish - (cha-nnad,
hammour or sharie)
Wash fish, gut and remove scales. Slit on both sides salt well including the gills and stomach cavity. Sprinkle bezar over and rub in well. Combine loomi, garlic, coriander and onions; mix well. Stuff the stomach with half of the mixture, spread the remainder over the fish. Cover with oil and wrap tightly in aluminium foil. Place on an ovenproof dish and bake at 325 degrees for 45 minutes. Open foil, brush with a little oil and put back in the oven until brown. Serve hot.
