
Mash-wee sa-mak ~ Barbecued FishServes 4
Literally, mesh-wee means barbecue and is one of the most famous dishes
in Arabic cuisine. Because the fish are so light (without spices and
oil), a person can eat up to six or seven fish without feeling full!
1 Nisar (snapper) Fish should be cooked straight after buying in the market. Keep heads and scales on, wash and salt gills as well as the outside of the fish. Place on a hot grill over the coals and do not turn until the fish are almost black in colour. Turn to other side and cook for approximately the same amount of time. Serve immediately.
