Yar-yurr / Je-shed ~ Shark with Spices

Shark is plentiful throughout the UAE and is reasonably priced. A traditional belief amongst men is that fresh cooked shark will make them feel strong and masculine! Always buy the shark fresh from the market and ensure it is about the length of your arm - the longer the shark, the tougher it is. The market will clean the shark, de-head it and remove the skin and tail.
Usually this dish is accompanied by boiled white rice, sliced limes, sliced raw onion, radishes, garlic chives and dates if in season.

1 baby shark
3-4 onions sliced
2 tablespoons loomi
1 tablespoon turmeric
1 tablespoon bezar
3 cloves garlic crushed
4 fresh tomatoes, finely chopped
1/2 cup corn oil

Cut shark into cubes around 2" (5cm) square. Plctce in a medium size soup pot, cover with water and boil until tender - anything up to 1 1/2 hours.
Keep testing until it is done, remove and drain, de-bone then shred the flesh. Discard the broth. In the same pan, fry the onions in the oil until brown, then add loomi, turmeric, bezar and garlic and fry gently.
Add the tomatoes, stir, then add the shark meat and fry gently. A little water may be added at this stage. Cover pan and simmer gently on low heat until dry for 20-25 minutes. Serve hot.
