Cooz / Peshew ~ Gelatine Flavoured CustardThis traditional Iranian dish found its way into the kitchens of the UAE several generations ago and has remained a firm favourite. Popular in the days before refrigeration, because it would set firmly on its own, it can be flavoured, or coloured, to choice and will taste better if refrigirated after cooling to room temprature.
1/2 cup agar-agar gelatine threads
Cut up the agar-agar and soak in water overnight. The following day,
remove the threads from the water and keep in a colander, leave to drain
for 10 to 15 minutes. Bring the milk, sugar and agar-agar to the boil,
reduce heat and simmer for 15 minutes, stirring continuously.
